Juice is pressed directly without settling and without SO2 to neutral oak vessels of a variety of formats, where spontaneous fermentation is allowed to take place. Malolactic fermentation and batonnage were withheld to create a pure-fruited, crystalline expression of Chardonnay. An elevage of 11 months ensures this wine’s natural opulence is framed beautifully by a gentle yet complex line of acidity and a touch of salinity.
